Domestic Rack of Lamb 29
Ginger Lamb Stock Reduction, Rosemary Pesto, Grilled Japanese Eggplant,
Sugar Snap Peas, Roasted Shallot & Watercress Risotto

Japanese Eggplant- A very narrow, purple eggplant with a tender, slightly sweet flesh. Eggplant is thought by most to be a vegetable when it is actually a fruit.
Risotto – (rih-SAW-toh) Italian rice specialty made by stirring hot stock into a mixture of rice (and often chopped onions) that has been sautéed in butter. The stock is added ½ cup at a time and the mixture is stirred continually while it cooked until all the liquid is absorbed before more stock is added. The result is rice that is creamy while the grains remain separate and firm.

BTG: Domain Arlaud, Bourgogne, Pinot Noir
Bottle: Red Burgundy or Northern Rhone
