Prosciutto – (proh-SHOO-toh) Italian for ham that has been seasoned, salt cured and air dried. The meat is pressed which produces a firm, dense texture. It is usually served thinly sliced and uncooked.
Galette – (gah-leht) a round, flat cake typically made a flaky pastry dough or yeast dough. The term also applies to a variety of both sweet and savory French tarts.
Chive Fritters – fritters are small cakes made with a primary ingredient that is mixed with an egg and milk batter and either pan fried or deep fried; wheat flour, cornmeal or a mix of the two may be used to bind the batter
