Grilled Artichokes, Spinach, Sun-Dried Tomatoes, Piquillo Peppers,
Basil, Castelvetrano Olives, Saba
Piquillo Peppers – (pi-kiyo) a variety of chili traditionally grown in Northern Spain. They are roasted over embers which give them a distinct sweet, spicy flavor, more akin to bell peppers than chili pepper, despite their small size.
Saba – (Sah-BUH) syrup made from freshly squeezed grape juice, also known as must. The grapes must contain many of the sugars naturally present, and when it is slowly cooked in syrup, it develops into a very rich, concentrated food that can be used in a wide assortment of ways.
